It’s crazy.
I am going to have to start getting organised in these next couple of weeks before I go.
So much to do.

This is what happens when I am faced with a bad day…

I Bake.

I’m a weirdo…I bake when I am stressed, sad, upset. It’s my coping mechanism.

Here’s a shocking photo from my stressful day on Thursday.

I made savoury pizza muffins, blueberry, apple & cinnamon & spicy pumpkin.

I am trying to make my own muffin recipes. I like nice big cafe style fluffy muffins. I want to try some Apple Custard & Black Forest cupcakes. Well the black forest are on request from my mum.
She loves Cherries & Chocolate.

Sunday things…

Outside my window...A spring garden that is looking beautiful with cherry blossoms & beautiful birds playing in the bird bath.

I am thinking...that my family are REALLY loud & that I am not going to miss that. x

I am thankful for...the career opportunities that I have been given. x

From the kitchen...Dad is cooking steaks & veg for the family. I had a salad :0)

I am wearing...Trakkies & a singlet top (I have been out in the garden). I will soon be wearing my jammies though for a night in scrapping. x

I am creating...At the moment I am finishing off a Christmas project for Wicked Princess.
I am also creating some swaps. I <3 swaps.

I am going...to be moving out in 6 weeks as of today. Exciting stuff. 

I am reading...Lots of cook books & Handle with Care by Jodi Picoult.

I am hoping...that I get put with a nice flat mate in the city.

I am hearing...Arguing in the kitchen. Dad *sigh*
The twilight soundtrack is also playing.

Around the house...Tension. Lovely.

One of my favourite things...Summer…and it can’t come soon enough.

A few plans for the rest of the week...Packing & organising bits & pieces for moving out.

Thank you!

For all your well wishes yesterday. I was very excited.

I have had an awesome day today, I had 3 layouts picked up for publication.
I’m a shocker when it comes to sending in LO’s for submission, I just never get around to it.
I did today and to my delight had a few acceptances!
Might do that more often. lol!

I have been baby sitting Barney (my sister’s puppy) today again & he really did wear me out. I am just taking these few minutes now to relax with a green tea & a blog update.

I am about to go out for a walk in the sunshine as we have had rain & thunder today & the sun has only just come out to play.

BRING ON SUMMER! (although I’ll be studying & working hard…I will enjoy the HEAT!!!)

I have a huge big YAY post…

OK you my have heard me mention a course a few times that I have applied for.

It’s something I have known about for months, applied for ages ago & had my interview for over a month ago!!

What is it? a chef course…it leads onto an apprenticeship to become a qualified chef.

What’s so special about this course?
Well it’s with Federal group which is a huge employer here in Tasmania & they offer an awesome course with better pay than usual chef apprentices & awesome opportunities.
Like working here….

It means less time as an apprentice as well…as the course is a little shorter..it’s just more time put in a shorter time frame.

So anyway back on topic.


I got a call today.
I GOT IN

Orignally I was shortlisted from over 100 applicants down to 30 and out of those 30 they have narrowed it down to 15 and I am one of them.

Woo hoo!

It means I am moving out of home in 6 weeks to the city for 12 weeks.
I will back for Christmas but I am going to be studying from end of November till March next year and then I will be working!

I go for my Chef uniform fitting in 2 weeks.

I am so so so excited

Thanks to all the girls that had their fingers crossed for me. I have been so lucky to get a spot & I can’t wait to start.

So there is my bit of excitement for today.
I have 6 weeks to get organised & so much that I want to get done in that time.
First on the list is getting a laptop so I can stay in touch with everyone.
Will have to start looking this weekend.

I’m on a bit of a high so I don’t think I am going to get much sleep tonight.

I have to say before I go (to watch Celebrity Masterchef)
that you must try & bake these cookies.

I made them tonight & they are A-M-A-Z-I-N-G

chaisnickerdoodles

(picture & recipe cred: Baking Bites)

Chai Snickerdoodles
2 cups sugar
2 teaspoon ground cinnamon
1 teaspoon ground ginger
1 teaspoon ground cardamom
1/2 teaspoon ground allspice
1 cup butter, soft
2 large eggs
1 1/2 tsp vanilla extract
2 3/4 cups all purpose flour
1/4 tsp salt
2 tsp cream of tartar
1 tsp baking soda

Preheat the oven to 350F. Line a baking sheet with parchment paper.
In a large bowl, combine sugar and spices; remove 1/2 cup of this mixture and place in a medium-sized, shallow dish or bowl (like a soup plate). Add butter to bowl and cream with sugar mixture until fluffy. Beat in eggs, one at a time, and vanilla extract.
In a medium bowl, whisk together flour, salt, cream of tartar and baking soda. Add to sugar mixture and stir until fully incorporated.
Shape dough into 1 inch balls and roll in reserved sugar-spice mixture. Place on baking sheet, leaving 2 inches between balls to allow for spreading.
Bake for about 12 minutes, until edges are firm to the touch, but not quite browned. Cool for 3-5 minutes on the baking sheet, then transfer cookies to a wire rack to cool completely.

Makes about 4 dozen.

My batch made 39 cookies. They smell so yummy.
The whole house smells like a chai latte.

Yuuum.

Ok I have to say a HUGE congrats to all that made the shortlist for Scrapbooking Memories masters.
I just got my e-mail newsletter & was so happy to see so many of my friends names on there.

Neil Perry Balance & Harmony

I got the most amazing gift today.

My Dad came in with this…

I love Neil Perry’s food. It is A-M-A-Z-I-N-G

So is this book. Not only does it come in a gorgeous box that is shimmery with gold print…it comes with beautiful photography and tissue paper pages. The photography & Asian art inside is exquisite.

I would love to go to one of his restaurants in Sydney> I saw the menu & it's so amazing.
Very expensive but very good!

There are so many recipes in here that I am going to try.

It’s a very expensive but special recipe book for my collection.

Speaking of cooking, that’s what I’m doing @ the moment.
I have a pork vindaloo & butter chicken in for tomorrow nights feast. I thought I would get them in a day early as curry always tastes better if it’s cooked a long time before to let the flavours develop.

I spent today mowing a rather neglected lawn & starting to weed the jungle. Why do the damn weeds grow so fast?
It seems you weed one area and by the time you move back there the weeds have grown knee high again. *sigh*
I guess it’s a never ending battle.
I have been in a little bit of a spring cleaning fizz lately.
Chucking, cleaning, sorting EVERYTHING.
It’s good though. I am getting LOTS done & feeling cleansed already.

I have some things to share tomorrow…
I just want to do a shout out for Wicked Princess.
They are turning 1 this month.
There are so many great specials going on in store.
This month I have this fabulous kit to work with.

I will never take electricity for granted again…

Really. I promise that. x

Our area was hit with a mini hurricane here on Sunday & we have been without power until tonight.
I missed; hot water, phone, internet, lights, cooking appliances, iPod (mine went dead), my electric blanket, the treadmill, music while cleaning, the heat pump (especially on cold nights!!)

OK I will admit that candlelit dinners & silent nights are nice but after a while when you haven’t had a hot shower & have to read your book by torch light you get sick of it!!!

So while my power was out the announcement of the new DT was made over @ Scrapbook Savvy.
Can you believe I missed the announcement that I am one of the new DT members!!!

I was so excited.

Poor Sar was waiting to hear back from me for the announcement with an e-mail, a forum thread and 2 messages on my answering machine (our phone lines were down)
I am sure she was glad when I finally came online tonight!

I was also excited to receive a $100 Wish gift card from Woolworths in the mail today.
If you shop there you may recall a promotion they had for Mediterranean products. You had to buy 6 Mediterranean products like fennel, artichoke etc… and go and say what you favourite Mediterranean meal is to cook and I won a voucher. Woo hoo!

I think that I can spend it @ Tandy. I want a new iPod so just maybe…
I have my eyes on this.

This Making Memories Mistletoe Recipe organiser.

I have just brought one in the hope of getting all our family xmas recipes organised into once place.

The problem is we have so many variations of fave recipes which we use @ xmas here that I am trying to make them all to test and see which are truely our faves to add to the book.
The shortbread one is finalised.
Gingerbread – still testing. (one of the xmas goals this year is to get a gingerbread house completed!)
Christmas cake – trying a new recipe for this year!
Chris. Pudding – We have always had the steamed in a boiler pudding. This year for the first time I am doing it in the calico cloth with the suet. Shall be fun.

So lots of cooking going on in this kitchen here.

What a crazy weekend.

and I got no photos. Eek.
I didn’t even get a photo of me dressed up for my interview..bugger.

Well interview went SO WELL.
Very happy with the whole day.
We had to leave home at 6.30 in the morning for the 3 hour drive to the city and then got a bit lost trying to find the casino.
We got there eventually and I just have to say that Federal Group (the company I was interviewed with) are so professional. I didn’t get nervous or feel ill like in most interviews because it was just so well planned and easy going.

We were told a light lunch would be provided & when we got there we were told that we had to make it. Lmao!

It was just a sandwich, so nothing too pressing but they did stand over and watch everything we did.

There were a few different group activities & tests & a couple of interviews. The day didn’t wind up until 4pm & then we had the long drive back home.

I WAS EXHAUSTED.

After all that, I don’t find out if I got a place until October 23. Long long nervous wait.
There were lots of great applicants (30 all up) and only 15 spots so I am not going to get down on myself too much if I don’t get a placement. I know I did my best & gave it everything I had.

So…fingers crossed. x

I can’t do a post without photos, so I thought I would post a few things that I love @ the moment.

A day @ the beach.

We went to the beach with Barney today.

I am really looking forward to my interview in Hobart this weekend for the chef course that I applied for.
It’s weird to look forward to something so ‘grilling’ but it’s a step closer to where I want to be & I can’t wait.

I actually have to distract myself during the day so my mind doesn’t wander off to the interview.

I have created a big SPRING CLEAN list. It’s HUGE!
I am slowly working through, sorting out cupboard & clothes. CHUCKING.
How Much I love to chuck.
I am actually starting to remind myself of my Aunty Stace…having a good cleansing session.

Once again things have been crazy around here. I wish I could say that I was busy with a job or school but in fact it’s just life. Yes, life is busy.
